Happy weekend, friends! I hope you had a wonderful Valentine’s Day, filled with love—and of course, a little chocolate! This time of year can be challenging when it comes to fresh produce, so I’m leaning into cruciferous vegetables, hearty greens, sweet potatoes, and vibrant citrus to keep meals nourishing and flavorful. March can’t come soon enough!

Meatless Monday: Black bean burgers with smoky red pepper sauce, Vegetarian Kale Caesar Salad, sweet potato fries 

Tuesday: One Pan Mongolian Beef from Sweet Savory and Steph, Vegetable fried rice, roasted broccoli 

Wednesday: Cornflake ā€œFriedā€ Chicken with Sauerkraut Citrus Coleslaw + Baked parsnip fries

Thursday: Brown Butter Miso -Glazed Wild Salmon, Cauliflower Crunch Salad, roasted carrots 

Friday: Lasagne Soup with simple arugula salad with Everyday Salad Dressing #1 + Italian Torta Caprese (Flourless Chocolate Almond Cake), if you are looking for something sweet

Saturday brunch: Hashbrown and Spinach Casserole 

Sunday: Fesenjan-style Chicken Stew Recipe with Walnut and Pomegranate Sauce + basic steamed rice with sautƩed spinach (or any other sautƩed green)
