
March is here, and I couldn’t be more excited—it finally feels like spring is just around the corner! This weekend is extra special because two of my kids will be home, which always makes for a full (and very happy) house. Plus, I’ve got a brand-new March cooking class coming your way, and whether it’s uploaded this weekend or Monday, I can’t wait for you to see it! It’s packed with fresh, seasonal flavors that are perfect for Easter, Passover, or just transitioning into spring. As always, I’ve put together a delicious and balanced dinner planner to help make your week easier—let’s get cooking!
Here’s your dinner planner for the week:
Meatless Monday: Roasted Vegetable and Black Bean Enchiladas Verdes (and a casserole version!) + Mexican-style Sauteed Greens
Tuesday: Italian Fried Rice Recipe (I’m going to add cauliflower for extra veg) + sautéed shrimp
Wednesday: Chicken Katsu from Well Plated by Erin, Miso soup, sautéed cabbage
Thursday: Spice-rubbed wild salmon, Warm Baked Goat Cheese Salad, Shredded sweet potatoes and apple
Friday: Italian wedding soup, Green Bean and Basil Salad with Balsamic Vinaigrette, crusty bread
Saturday brunch: Apple-Dipped Pancakes + Overnight Refrigerator Oat and Chia Porridge (make sure to prep this on Friday night)
Sunday: Naan Pizza, something similar to this + hummus and red pepper pesto from Quicker Than Quick plus crudites
