I just spent a week in the desert for the Indian Wells tennis tournament, soaking up the sunshine, enjoying great food, and getting inspired by fresh, vibrant flavors. Now that I’m back, I’m leaning into light, fresh, and nourishing meals as we transition into spring. And with St. Patrick’s Day on Monday, it’s the perfect excuse to cook up some delicious green dishes—no artificial food coloring required! Whether it’s split pea soup, Colcannon with cauliflower and kale, or a bright, veggie-packed risotto, there are so many ways to celebrate with wholesome, naturally green foods. Here’s what’s on the menu this week—let’s get cooking!

Here’s your dinner planner for the week: 


Meatless Monday (St Patty’s Day): You can make an array of yummy “green” things for St. Patrick’s Day without using food coloring. We will most likely make split pea soup and Irish soda bread, (or my Irish soda bread-style muffins from Instagram using Straus Family Creamery’s Kefir) plus the Colcannon with Cauliflower and Kale is also great.  Other green food you could try green matcha chia pudding, “leprechaun juice” smoothie, green spinach risotto, asparagus or broccoli soup, one pot barley with melted cabbage from my cookbook or any recipe using a green vegetable such as Brussels sprouts, broccoli, cabbage or spinach 

Tuesday: roasted chicken + Spring Salad with Oranges, Avocado, Radishes and Pumpkin Seed Brittle

Wednesday: Red Pepper Cashew Pasta with Roasted Cauliflower from Pinch of Yum, sautéed shrimp or chickpeas, sautéed spinach 

Thursday: Asian Turkey Lettuce Cups, Asian Slaw, chipotle sweet potato fries  (minus the chipotle)

Friday: Mediterranean Fish Stew + crusty bread and some olives (a simple salad is nice too)

Saturday brunch: Lemon-Ricotta Soufflé with Blueberries

Sunday: Sheet pan chicken with artichokes, cherry tomatoes, and zucchini (you can sub in another quick-cooking vegetable like snap peas or asparagus) + Cauli-Rice
