Meatless Monday: “Lasagna-Style” Stuffed Mushrooms + garlicky zucchini

Tuesday: Shrimp and mixed vegetables with coconut-basil sauce + cauli-rice or steamed rice

Wednesday: Veggie Packed Turkey Burger with Green Goddess Slaw from Lillie Eats & Tells 

Thursday: Gazpacho with avocado + White bean salad with celery, mint, and tuna plus crusty bread

Friday: Chicken souvlaki with tzatziki, Quinoa Tabbouleh, simple green salad with everyday salad dressing #2

Saturday brunch: Egg-less Spring Vegetable Frittata + Dandelion Salad with Meyer Lemon Vinaigrette

Sunday: roasted chicken + Summer Corn Salad with Avocado + cucumber, radish, herb (basil, dill, or mint) salad seasoned with oil, red wine vinegar, salt/pepper to taste
