I just got back from a magical week in Aspen with Hubs and some friends, and wow — it was exactly the reset I needed. Being out in nature, moving my body, and slowing down reminded me how important it is to step away and recharge. I came home feeling refreshed and inspired, and I hope this week’s dinner planner helps you feel the same — nourished, organized, and ready for a delicious week ahead!

Here’s your dinner planner for the week:

Meatless Monday: Zucchini Rollatini, sauteed spinach with garlic and chili flakes (if you don’t mind the spice), crusty bread 

Tuesday: harissa chickpeas and vegetables with dill sauce + Lemon and cumin-scented quinoa 

Wednesday: Greek Sheet Pan Chicken with Lemon and Potatoes + Oven Baked Eggplant with Olives, Capers and Basil

Thursday: Easy Skillet Tamale Pie + Market Salad with Chipotle Vinaigrette 

Friday: Lime-soy Grilled Fish, Rice Chopped Salad, grilled sweet bell peppers + mushrooms 

Saturday brunch: Invisible Apple Cake + yogurt with fresh berries 

Sunday:Summer Sausage Skillet with Creamy Pesto Sauce from Brocc Your Body served over cauli-rice
