I just spent the week on Long Island celebrating two very special milestones — my daughter’s bridal shower (ALL the details will be in an upcoming Substack since it was a mostly DIY event!) and a big birthday for my mom. It was so much fun and full of love, but now it’s time to get back into the rhythm of everyday life. And since it’s pretty much back-to-school everywhere, I know how helpful a solid dinner plan can be. This week’s lineup is full of cozy sheet pan meals, fresh salads, and even a fun weekend bake to make weeknights smoother and more delicious.

Here’s your dinner planner for the week:

Meatless Monday: Spinach-artichoke spaghetti squash boats, I could eat just this but a simple vegetable or salad on the side would be good if you need more

Tuesday: Braised Lentils with Brussels Sprouts and Creamy Dijon Cashew Drizzle (p. 146) from Kitchen Matters, served alongside baked fresh fish

Wednesday: Spinach Pizza Quesadilla + La Scala Chopped Salad (Copycat Recipe)

Thursday: Turkey Meatloaf, Roasted smashed potatoes, Fennel and green bean salad with olives 

Friday: Chicken Scarpariello + Creamy Polenta 

Saturday brunch: Strawberry Jam Spelt Flaxseed Muffins

Sunday: Late summer minestrone + caprese salad
