I’ve had a week, friends — full of cooking, hosting family, and lots of events (more on that soon). October has been such a beautiful blur of fall produce and family gatherings, and I’m leaning into cozy, comforting dinners that don’t require too much fuss. This week’s menu makes the most of the season — think hearty greens, sweet potatoes, and all those earthy, grounding flavors that feel just right for mid-October.

Here’s your dinner planner for the week: 

Meatless Monday: Coconut Braised Cabbage from Delish (you can serve this over steamed rice or with bread) + tofu for extra protein

Tuesday: Baked “Fried” Chicken  + coleslaw and buns (optional)

Wednesday: Creamy Roasted Poblano Soup served with simple green salad + I’ll buy a rotisserie chicken to dice up to add as protein

Thursday:  Stir-fried Grass-fed Beef and Broccoli + steamed rice or cauli rice

Friday: simple roasted salmon, Caramelized Pear Salad with Maple Vinaigrette, roasted sweet potatoes

Saturday brunch: Banana Carrot Muffins

Sunday: Italian Pot Roast from Kitchen Matters served with cauliflower mashed potatoes
