I’m still floating from the joy of this past weekend — our daughter Anna’s wedding was everything we hoped it would be and more. We are completely overjoyed! It was such a beautiful celebration of love, family, and togetherness, and I couldn’t be more grateful. I shared a few photos on Instagram (and the photographer did too) if you’d like a little glimpse of the magic. And now, as we ease back into routine and head into Halloween week, I’m ready for cozy, comforting dinners that are simple to pull together — because let’s be honest, this week calls for a little ease and a lot of balance (especially with all that candy around!).

Here’s your dinner planner for the week: 

Meatless Monday: Roasted Vegetable and Black Bean Enchiladas Verdes + Mexican Chopped Salad

Tuesday: Herbed sweet and spicy wild salmon p. 247 from QTQ  + Butternut squash salad with pomegranates and toasted pumpkin seeds

Wednesday: Turkey Meatloaf  served with cauli-mashed potatoes and Balsamic-roasted broccoli and cherry tomatoes

Thursday:  simple roasted chicken (or your choice or protein), Cilantro-Lime Rice, Bell Pepper Jack o’ Lanterns (such a cute night before Halloween addition)

Friday (Halloween) : Turkey chili (to make this plant based: swap out turkey for an equal weight of cooked beans or cooked lentils) + topping bar, cornbread and Roasted Stuffed Fondue Pumpkin, Pumpkin Icebox Cake for dessert

Saturday brunch: Baked Pumpkin Oatmeal

Sunday: Pesto Zuppa Toscana Meatballs from Half Baked Harvest served with pasta of choice + green salad topped with Lemon-Basil Dressing (use this dressing recipe)
