If you’re looking for a little extra inspiration this week, the February online cooking class is officially live and ready for you to cook along—packed with practical recipes and techniques you can use on repeat. And if you missed Monday’s Substack, I shared a Valentine’s Gift Guide with thoughtful, useful ideas (nothing fussy, all very doable). One quick note: this dinner planner starts on Monday, so if you’re hunting for Super Bowl food ideas, be sure to check last week’s planner for game-day inspo.

Here’s your dinner planner for the week:

Meatless Monday: Use those Super Bowl Leftovers with a Sheet Pan Quesadilla and Chicken and Lime Soup with Avocado (technically not meatless)

Tuesday: Stracciatella (Italian Egg Drop Soup) + French Bread Pizza (or homemade pizza night!) 

Wednesday: Easy Chinese Chicken, Chili Crunch SautĂ©ed Cabbage, Vegetable fried rice 

Thursday: Sheet Pan Gnocchi with Spicy Sausage, Butternut Squash & Hot Honey from Ambitious Kitchen (You can sub turkey or chicken sausage) + I’ll add sautĂ©ed kale 

Friday:  Roasted Vegetable Buddha Bowl with Lemon-Tahini Dressing served with quinoa 

Saturday (Valentine’s Day): I always used to make my Chicken Pot Pie (omit the chicken and sub extra veggies for a vegetarian version) with a simple fresh side salad. Hubs requested French Onion Soup Chicken this year!! I can’t decide if I want molten chocolate cakes or vegan brookies for dessert….. This olive oil cake with citrus glaze is spectacular. Other dinner options that I love for Valentine’s Day are Salmon with Beets and Spinach, Hearty Vegetable Vegan Lasagna or even Lasagne Cupcakes along with a lightly tossed green salad (for fun I take out my mini heart shape cookie cutter and cut radishes and avocado into hearts.) Another dessert option could be these Mini Flourless Chocolate Cakes with Raspberry Sauce or Chocolate Bundt Cake with Chocolate Ganache. Yum! If you’re making a Valentine’s Day breakfast instead of dinner I love making these pink Pitaya Pancakes. This Valentine’s Day Snack Board is the perfect snack. 

Sunday: Vodka Sauce Chicken Parmesan Sliders with Mozzarella and Pesto, Baked parsnip fries, sauteed spinach
