
This week’s dinner planner lands on Valentine’s Day weekend, which feels fitting after a full and happy house over here. I had my daughters and their significant others with me all week, and there’s nothing better than a kitchen full of conversation, extra chairs pulled up to the table, and meals that stretch a little further than planned. Whether you’re celebrating Valentine’s Day, enjoying the long weekend, or just easing into a cozy February week, this plan is all about comforting, doable dinners that feel a little special without being complicated. Here’s your dinner planner for the week:
Meatless Monday: Sweet Potato and Black Bean Tacos + Tortilla soup
Tuesday: Sausage Lentil Soup with Kale + crusty bread
Wednesday: Kung Pao Cauliflower served over quinoa + steamed shelled edamame + steamed bok choy
Thursday: roasted chicken, Balsamic Roasted Rutabagas, Arugula + shaved fennel + lemon vinaigrette (use this recipe for the vinaigrette)
Friday: Rosemary and garlic lamb chops from Delish D’Lites, Millet-Cauliflower Mash, Mixed Greens With Green Beans, Almonds and Dried Cherry Vinaigrette
Saturday brunch: Grain-free White Bean Coffee Cake
Sunday: Homemade ramen noodle soup served with hard-boiled eggs, cooked shrimp, shredded chicken, or tofu + mushrooms and spinach
