
I spent a few days in the desert this week. The weather wasn’t exactly postcard-perfect, but it was still a welcome change of scenery. I tried a new restaurant that I really enjoyed, Bar Issi, which reminded me that I’m overdue to update my old Substack with fresh desert recommendations. I’ll work on that soon. In the meantime, I’m leaning into simple, bright meals this week – the kind that feel nourishing and balanced after a little travel and restaurant food.Â
Here’s your dinner planner for the week:
Meatless Monday: Spaghetti squash with kale and chickpeas + roasted cherry tomatoes with a balsamic drizzle
Tuesday: Chicken tikka masala, Indian basmati rice with peas + sautéed spinach
Wednesday: Wild salmon patties, Fennel Salad, Lemon Herb White Beans (warm cannellini or butter beans with olive oil, garlic, lemon zest + juice, parsley, flaky salt)
Thursday: Slow Cooker Barbacoa-Style Grass-Fed Beef Tacos, Avocado and jicama salad (I’ll omit the mango), roasted sweet potatoes
Friday: Coconut Lentil Curry from A Couple Cooks served over steamed or cauli-rice + I may add some toasted toasted cashews or pumpkin seeds
Saturday brunch: Breakfast Nachos
Sunday: Italian wedding soup + focaccia bread
