Happy weekend, friends! As we enter Thanksgiving week, now is the perfect moment to map out your meals, keep things simple, and reclaim some peace in the kitchen. My goal this week? Make your cooking streamlined, turn prep into stress relief (not stress itself), and help you show up to the table relaxed and ready. If you haven’t yet, hop over to my Substack. Here’s your dinner planner for the week:

Meatless Monday: Minestrone Soup from Delish + I might add in a few Cheddar-Chive biscuits that I have frozen for Thanksgiving, otherwise just some sourdough, olives and cheese

Tuesday: Slow cooker chicken tacos + Mexican Cobb Salad (you can omit the chicken) 

Wednesday: leftovers! Make it easy on yourself the night before and prep while eating leftovers from Monday and/or Tuesday!

Friday: Leftover Mashed Potato Gnocchi and check here for other leftover ideas

Saturday brunch: Leftover Stuffing and Egg Bake

Sunday: Turkey and Spinach Quesadillas with Cranberry Salsa + any left over vegetables or Turkey Avgolemono Soup (recipe coming this week!)
