Here’s your dinner planner for the week:

Meatless Monday: Vegetable Chili + Green Chile and Cheese Cornbread

Tuesday: Chinese chicken salad p. 64 from Quicker Than Quick

Wednesday:  Easy roasted Salmon + Charred Cabbage with Mushroom Farro

Thursday: Stir-fried beef and broccoli, steamed brown rice or cauli-rice

Friday: Portobello and Poblano Tacos w/ Charred Corn from KM (I’ll add some Crispy Baked Tofu for protein) + salad with pinto beans and/or cheese

Saturday brunch: Cranberry-orange almond flour muffin

Sunday: Creamy Chicken and Wild Rice Soup, Baked Feta from QTQ, Kale salad with creamy lemon dressing
