
Happy Hanukkah to all who are celebrating! This week’s planner is filled with cozy, comforting meals to keep you well-fed through the holiday bustle. Here’s your dinner planner for the week:
Meatless Monday: Vegetarian Mushroom Wellington, Zucchini-potato latkes, Carrots with Tahini Sauce (I’ll roast them)
Tuesday: Turkey sausages with cabbage and fennel + Roasted smashed potatoes
Wednesday: Cranberry Balsamic Chicken, cauli-rice, Brussels Sprouts Salad with Truffle Vinaigrette
Thursday: Coconut Curry Salmon from Pinch of Yum, white rice, roasted broccolini
Friday: Turkey and pinto bean sloppy joes, Baked chipotle sweet potato fries, Harvest Kale Salad (I’ll omit the cornbread croutons)
Saturday brunch: Whole grain buttermilk waffles
Sunday: Cassoulet-Style Chicken and Sausage + Sautéed spinach
