
Most of the country is still deep in winter mode, which is my cue to lean hard into warming, nourishing food, the kind that makes the house smell good and feels like it’s doing you some favors. This is also the perfect time to make a pot of homemade stock (or two) and stash it in the freezer; future-you will be very grateful when soup night comes together in minutes. This week’s dinner planner is all about cozy, doable meals that don’t require heroics, just good ingredients and a little intention. Here’s your dinner planner for the week:
Meatless Monday: Vegan Lentil Shepherd’s Pie + green salad with Everyday Salad Dressing #2
Tuesday: Everyday Turmeric Chicken, Indian basmati rice with peas, sautéed spinach
Wednesday: Velvet Chicken and Spinach Soup + Cheddar Biscuits from Leite’s Culinaria
Thursday: roasted simple salmon, Collard Greens Salad with Lemon-Parmesan Dressing, Crispy salt and vinegar potatoes
Friday: Easy Italian Grinder Sliders + Broccoli White Bean Soup
Saturday brunch: Starbucks Copycat Egg Bites + fresh fruit
Sunday: Parchment baked halibut with cilantro and ginger + Sugar Snap Pea and Quinoa Salad (I’ll omit the tofu)
